When shooting, it uses the ambient heat to turn into a gas, which cools down the gun/magazine, causing it to cool down. As such, it gets less efficient as the pressure drops, and as the temperature decreases. That's why there are several pressures available, so you can compensate for colder conditions - when one gas type is not giving you the performance you need, you can move up to the next pressure.
